Oven Roasted Vegetable Medley

Serves: 10-12 people
Time: 3 hours

Ingredients

1 lb. yuca, peeled and diced
1 large diced red pepper
1 large diced green pepper
1 small eggplant, large dice
1 zucchini, large dice
1 yellow squash, large dice
1 small red onion, large dice
1 Tablespoon chopped garlic
1 Tablespoon of your favorite herbs
2 Tablespoons extra virgin olive oil
salt & pepper

Directions

Preheat the oven to 300 degrees.

In a large pot filled ¾ full with water, add yuca and bring to a boil.  Simmer for 20-30 minutes or until tender and strain.

Place all the vegetables including the yuca in a roasting pan.  Add the oil, salt & pepper and place it in the preheated oven.

Allow the vegetables to roast in the oven for about 20-30 minutes or until the vegetables are tender but crunchy.
